Merlot, the iconic grape variety used for Bordeaux wines, hails from the same region as the fruit we use to produce Saint Lamvinus, the Côtes de Bourg area. Around eight weeks of soaking allows the lambic to extract all the tannins from the grapes. As in wine production, a good grape harvest will yield a beer with more body and character while a poorer harvest will result in less fruity Saint Lamvinus, resulting in a more pronounced lambic presence.
